Butter Meltaways (Sugar Cookies)
1 cup butter
3/4 cup sugar
1/4 cup powdered sugar
1/2 teaspoon vanilla
2 1/2 cups flour (gluten free blend also works)
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
Cream butter and sugars. Add egg and vanilla, mix. Add flour, baking soda, and cream of tartar, mix. Chill for 1 hour. Preheat oven to 350º F. Roll dough to about 3/8" thick and cut into desired shapes. Bake for 8 minutes.
Icing (dries shiny and hard)
1 cup powdered sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/4 teaspoon almond extract
food coloring or flavored gelatin*
Stir together powdered sugar, milk, corn syrup, and almond extract until smooth and glossy. Add food coloring OR sprinkle flavored gelatin (I used strawberry on these) until desired color is achieved. This not only adds color, but a wonderful hint of flavor! Pipe or spread on cookies with a spoon. Let dry several hours or overnight if stacking.
These cookies are more delicate than your typical sugar cookie yet can be used for cutout cookies. I've also included a frosting recipe that dries shiny and hard (and is not royal icing). Try both out for St. Patrick's Day or Easter cookies!
