-French Toast: Prepare according to your favorite recipe. Cool. Freeze in a zip top bag, separating each with a piece of wax paper. Reheat in toaster or microwave.

-Grilled chicken: Grill, cut/pull apart and freeze. Ready to use in anything from chicken salad to quick pasta dishes or tacos.

-Meatballs: See recipe in blog. Use turkey or ground beef. Cook. Cool. Freeze on the pan then place in zip top bag. Reheat in microwave. Add to pasta dishes or eat as a snack.
-Meatloaf: See meatball recipe in blog; just substitute ground beef for the turkey. Also try a 2:1 ratio ground beef to ground pork. Form and freeze (unbaked). Then put in zip top bags separated by wax paper. To cook: Place in metal or glass dish, bake at 375ºF for 45 minutes to 1 hour (from frozen). Can thaw in fridge overnight and bake for less time.
-Cut up chicken breast: frozen in 1 pound amounts, perfect for a quick thaw in water (place bag in cold water for quick thaw) and use in skillet dishes with vegetables, fajitas, and rice dishes.
-Cut up vegetables: prep work for a lot of dishes! I did a couple varieties: Mushrooms + Onions (great with beef and broccoli or beef stroganoff), Onions + Peppers (fajitas), Onions + Mushrooms + Zucchini + Carrots (all purpose), and Carrots + Peppers + Onions (great for my cajun chicken linguini dish).
-Also try: taco meat (cooked ground meat with taco seasoning), spaghetti sauce with meat (cook the meat, drain/rinse, add sauce, freeze)
-Muffins: My favorite is a banana chocolate chip muffin, but works with any muffin recipe.

Everything I made is both dairy free and gluten free. It may not be a full meal but for me, having the components ready is 90% of the meal. I have a rice cooker that is wonderful (set it and forget it!) and it doesn't take much time to boil water for pasta or put store bought french fries in the oven for quick side dishes.
